Creamy Spinach and Broccoli Pasta with Chicken
This is my brilliant friend Sara Tane's high-protein, vibrant Creamy Spinach and Broccoli Pasta with Chicken. It's quick, easy, and so satisfyingly good. You get the rich, velvety indulgence of a creamy sauce paired with a massive hit of greens and lean protein. The secret ingredient is cottage cheese. Using cottage cheese is a total game-changer. Not only does it skyrocket the protein content, but it also creates a surprisingly thick, creamy texture without the need for heavy cream or butter.

New Orleans Gumbo
Gumbo and Jambalaya always remind me of my aunt Marjorie. She was a fabulous cook
and really inspired me on my cooking journey. She taught me many things, mostly about cooking. She taught me everything she knew about Indian food. She and my uncle lived in India for a year in the early sixties. They lived in New Orleans for well over 30 years and taught me how to make Jambalaya, gumbo, shrimp creole, and the list goes on.... This New Orleans Gumbo is a classic Creole recipe. It’s chicken, andouille sausage, shrimp, and fresh okra simmered with a dark roux and served over rice.

Japanese Curry Chicken Pot Pie
My daughter Grace made this delicious Japanese Curry Chicken Pot Pie. It’s a harmonious marriage of two beloved comfort food icons. The filling takes the soul-warming essence of a traditional pot pie—juicy shredded rotisserie chicken, potatoes, and carrots—and smothers it in a velvety, rich Japanese curry sauce. Using a store-bought Japanese curry mix, which gives a gravy-like thickness, deepened by warm spices and a bright hint of fresh ginger. The entire concoction is then sealed under a buttery, store-bought puff pastry crust, which bakes to a beautiful golden crispness, ready to soak up every drop of that savory, spicy-sweet sauce.

Chicken, Leek and Stuffing Hot Pot
This Chicken, Leek and Stuffing Hot Pot is from Marks & Spencer. Chicken thighs, salty pancetta, leeks, onions, mushrooms with herby stuffing balls topped with sliced potatoes. It's a variation of a classic British hotpot or a deconstructed chicken pot pie, offering a hearty and comforting meal with a clever twist. While traditional hot pots often feature a sliced potato topping, this version incorporates delicious stuffing balls. It's so incredibly comforting.

Cheez-It® Cracker Chicken Caesar Salad
My friend Chef Sara Tane (I hope she remembers me when she has her own Food Network show!) is responsible for this out of this world recipe. She has developed several recipes for Cheez-It crackers. This Cheez-It® Cracker Chicken Caesar Salad is crazy good. I think I will throw all bread crumbs out and use Cheez-Its from now on. I have merged her Caesar salad with her Cheez-It Cobb salad. I have been an enormous fan of these crackers since college. I used to dip them in Kraft Pimento spread. My culinary tastes were born in Indiana in the early '60s.

Back-Pocket Caper-Butter Chicken
Your jar of capers is the secret weapon in this super quick and easy recipe. A vibrant marinade made from caper brine, red wine vinegar, and grated garlic first infuses chicken breasts, keeping them tender as they sizzle in a hot pan. Then, that same flavorful marinade, with a touch of water and honey, becomes a bright, tangy pan sauce, finished with butter for a velvety texture and whole capers for bursts of briny goodness.
