Our beautiful daughter Zoe and Pierce got married last weekend. The wedding was perfect. It's been a whirlwind of planning over the past few months and we are all about to collapse, but boy was it fun. I decided to make this Eggs Benedict Casserole for the morning of, so we got our sustenance in before the champagne, etc. It's an easy and elegant, make-the-night-before kind of breakfast. It calls for Béarnaise sauce, but I would recommend using Knorr Béarnaise Sauce to make it even easier.

Preacher’s Wife Mac & Cheese
This is dedicated to my dear friend Shannon who recently passed away. She sat behind me in homeroom in high school. Both our names started with an Mc. She lit up any room that she walked into with her smile and wild enthusiasm for just about anything. She planned her celebration of life down to the very last detail (and yes, a conga line and bright colorful attire were mentioned), including her famous recipe for this Preacher’s Wife Mac & Cheese, which I of course, immediately volunteered to make. All I can say is that it’s rather lactose-laden with pounds of upmarket cheeses! She made this for many of her friends over the years on special occasions. Tears are not written in the recipe, but truth be told there were a few shed during the making of this. I am not sure how life with be without you in it, but I promise to smile and champagne toast you the next time I make it. I love you Shannon.

Our dear friend Liz passed away after a long battle with cancer. She was an amazing woman and a big part of our family's life. After the service, we went to her home to sit Shiva, which literally means “seven” – a period of seven days when a Jewish family has a formal mourning time to honor their loved one. It was a beautiful service and day, in which we shared many stories about our friend Liz. I brought this Noodle Kugel with Caramelized Onions & Brown Butter. Wild Rice & Chicken Casserole
I used to make this Wild Rice & Chicken Casserole when we were first married for dinner parties. It was "cheap and cheerful" as we would say. It features cooked chicken, wild rice (personally, I prefer to use a wild rice blend when making this dish, which does make it cheaper!), mushrooms, pimentos, and a creamy sauce. It's then topped with slivered almonds and baked in the oven until bubbly and golden brown on top.

Parmesan Mushroom Casserole
This Parmesan Mushroom Casserole is absolutely delicious and the best thing is that it can be made ahead and finished off in the oven. The sliced mushrooms are bathed in a creamy sauce, topped with a crispy parmesan breadcrumb mixture. It's a vegetarian side dish that goes well with many main courses. All I can say is YUM, so good!

This Baked Gnocchi with Mushrooms and Artichokes is a delicious and easy vegetarian dish that is made all in one pan. I try to always have gnocchi in the pantry for those nights when I am too tired to cook, but I want something comforting. The combination of pillowy gnocchi, earthy mushrooms, and briny artichokes is a fabulous combination. I actually made this in advance and put it in the fridge, then put it in the oven for dinner.

Lighthouse Inn Potatoes
Lighthouse Inn Potatoes originated at an iconic hotel and restaurant located in New London, Connecticut, which closed in 2008. Executive Chef Leon “Wally” Walden, who worked there for nearly 50 years, created Lighthouse Inn Potatoes. It is similar to scalloped potatoes, but instead of sliced potatoes he used chunks of potatoes that are cooked in light cream and butter and a bit of baking soda, which neutralizes the potatoes’ tannins and create a velvety sauce. The potatoes are topped with buttery parmesan panko breadcrumbs and baked until the bubbling and golden brown.
