Weeknight Beans on Toast

My daughter Grace made me this Weeknight Beans on Toast for Mother's Day dinner. It was so delicious and simple. This recipe will make more ragù than you need, but the leftovers can be repurposed as a quick topper for pasta on another night. Nothing beats the convenience of a bag of spinach, but any green will work here. Try mustard greens, kale, or collard greens.

Currant-Orange Irish Soda Bread

I know that it's a day after the fact, but I made this bread yesterday for lunch and it was so good that I had to post it. Our orange trees are bursting with blossoms in our backyard and the intense aroma lured my outside. I also happened to have leftover currants.

Ireland's famous freckled quick-bread is expected on St. Patrick's Day, but the currants and orange zest in this loaf make it wonderful for year around baking. Sliced soda bread makes fantastic toast -- give it a try!

Blackout Chocolate Banana Bread

This is what happens when banana bread meets chocolate! My daughter Zoe made this Blackout Chocolate Banana Bread. It's pretty spectacular and super moist and seriously delicious. Whole wheat flour lends a nuttiness to the cake, but feel free to replace it with more all-purpose if that’s what you have on hand. Thanks for bringing me a slice Zoe!
