Mexican Chicken, Corn & Black Bean Cornbread Casserole
This Mexican Chicken, Corn & Black Bean Cornbread Casserole only takes 5 minutes prep time. The creamy chicken filling is topped with cheesy cornbread. I used some taco seasoning which I bought in Santa Fe New Mexico which was VERY hot! I happen to like it that way, not sure about the rest of my family!

Bourbon-Glazed Pork Chops with Hoppin’ John
Bourbon-Glazed Pork Chops with Hoppin' John is really delicious. It’s made in one skillet. The Kentucky bourbon gives a kick to these sticky glazed pork chops. In the healthier black-eyed pea Hoppin' John, this easy recipe uses smoked paprika instead of traditional ham or bacon. Hoppin’ John is a dish served in the Southern United States. Eating Hoppin' John on New Year's Day is thought to bring a prosperous year filled with luck. The black-eyed peas are symbolic of pennies or coins, and a coin is sometimes added to the pot or left under the dinner bowls.

“16 Bean” Pasta e Fagioli
This “16 Bean” Pasta e Fagioli is from Ina Garten’s new cookbook, Cooking for Jeffery. Pasta e fagioli, meaning "pasta and beans", is a traditional Italian dish. Pastafazoola, a 1927 novelty song by Van and Schenck, capitalizes on the Neapolitan pronunciation in the rhyme, "Don't be a fool, eat pasta fazool", and the Dean Martin song "That's Amore" includes the rhyme "When the stars make you drool, just like pasta fazool, that's amore".

Green Chile Frito Pie
Frito pie is traditionally chili meat, cheese poured into a snack-sized sack of Frito chips cut open sideways. This recipe is more of a bowl. I had it at the Plaza Café in Santa Fe, New Mexico. It was probably one of the best things I eaten in a long time. I have always been a fan of green Hatch chilies. This Green Chili Frito Pie was so good and VERY spicy, just they way I like it!
