Buttermilk Chicken
This is the most moist, tender chicken I have ever made. Buttermilk Chicken is a must to add to your repertoire. I have a half a carton of buttermilk in the refrigerator, so when life gives you buttermilk make this chicken! This is the most moist, tender chicken I have ever made. I did marinate it for a full 24 hours, due to the fact that I was too tired to cook the night before! I also cut the breasts in half before marinating.

Chicken Zorba
This Chicken Zorba recipe is my nephew’s favorite dinner. It’s a recipe from a Sainsbury’s card from the early ’90s. I have to say, I understand why it’s his favorite dinner. The chicken is so tender (due to marinating it overnight) and flavorful. Also, the hummus and Greek yogurt mixture is heaven!

Try this Sausage Carbonara when you don't have bacon. Carbonara is an Italian pasta dish from Rome, based on eggs, cheese (Pecorino Romano or Parmigiano-Reggiano), bacon or pancetta, and black pepper. This recipe uses sausage instead of bacon. Spaghetti is usually used as the pasta, however, fettuccine, rigatoni, or bucatini can also be used. You can also throw in some frozen peas.

Potato, Pepper, Onion Frittata with Bacon & Parmesan
Potato, Pepper, Onion Frittata with Bacon & Parmesan makes a great breakfast or lunch. The great thing about making a frittata is that you can basically put any type of vegetables that you have on hand in it. Also, you can leave out the bacon to make it vegetarian, just use olive oil in the pan before sautéing. This can be served hot, warm or cold. It's also great for a picnic!
