Cooking Method: Sautéing

Caramelized Spicy Green Beans

I'm always searching for new side dish recipes. These Caramelized Spicy Green Beans are quick and easy to prepare. Haricot vert is the French term for these long, slender green beans. "Haricot" means bean and "vert" means green in French. They are also more tender and have a more robust flavor than your typical American green beans.

One Pot Dirty Rice

Dirty rice is a traditional Cajun and Creole dish made from white rice which gets a "dirty" color from being cooked with small pieces of chicken liver or giblets, green bell pepper, celery, and onion, and spiced with cayenne and black pepper. This version skips the chicken livers, which I suppose makes it a Not-So-Dirty-Rice! This spicy One Pot Dirty Rice is a great weeknight meal served with cornbread.

Lemon Mushroom Chicken

I am having a hard time adjusting to being an "empty nester". The only good thing is that I can make things the girls hate, like mushrooms! This delicious creamy lemony chicken is prepared in a skillet and sautéed with mushrooms. This is pretty much a chicken piccata, but without capers and with mushrooms.
