Omelet á la Microwave

José Andrés is a name synonymous with culinary innovation and impactful humanitarianism. This Spanish-born chef founded the nonprofit World Central Kitchen, completely revolutionizing disaster food aid by being on the ground, feeding people immediately when crisis strikes. WCK was there for the nearby and recent Los Angeles fires. Beyond his incredible humanitarian work, Andrés also presides over an empire of more than 30 restaurants, and his list of accolades is truly extensive.

Anyway, I saw a friend of his, a renowned French chef and restaurateur, Nicolas Fanucci, make this surprisingly simple yet perfect dish: the Omelet á la Microwave. Yes, you read that right! This omelet is designed to be made in the microwave, taking only 1 to 2 minutes. The secret to its perfection lies in its simplicity and one unexpected ingredient: a touch of mayonnaise mixed in with the eggs. This addition not only contributes to the omelet's creamy texture but also eliminates the need for any additional salt and pepper. It's a testament to how even the most basic ingredients, prepared thoughtfully, can yield delicious results.

Ramen Noodle Salad

Yesterday for lunch, I made this Ramen Noodle Salad. It's another one from Chrissy Teigen's book. She calls it Dump and Done Ramen Salad. I have made many salads using crushed up uncooked ramen noodles. It adds a lot of crunch and nice texture. I have adapted it to suit my tastes, like using green onions instead of red onions, etc. You could add some cooked shrimp or chicken to add protein to this salad. It's absolutely delicious and very adaptable to your own tastes.

Scrambled Eggs with Tomato & Cheese in the Microwave

My brother David called me and said he couldn't find his recipe for Scrambled Eggs with Tomato & Cheese in the Microwave. To be honest, I had never heard of it but, with one eyebrow raised, I managed to find the recipe he likes. It's from Martha Stewart. Who knew she would ever stoop to so low to use a microwave! Here is the beauty of this, you make it, cook it and eat it all in the same little bowl or cup. I think this would be a great way for all the frazzled parents to make breakfast for their kids in the morning before online school. I realize you might have to replace the tomatoes for some cooked bacon or sausage!

Channa Masala Tomato Soup

This Channa Masala Tomato Soup, which is a combination of Trader Joe's Organic Low Sodium Tomato & Roasted Red Pepper Soup and frozen Channa Masala is absolutely delicious. I am going to make sure to always have the ingredients on hand. Serve it with their Malabari Paratha.

Baked Parmesan Green Beans

Baked Parmesan Green Beans

These Baked Parmesan Green Beans are very appealing. They word crispy was used in the title, which I removed. They aren't especially crispy, though they are delicious.

Rosemary Sweet Potato Chips

Rosemary Sweet Potato Chips

Rosemary Sweet Potato Chips are easy to make in the microwave. I managed to make this quick and easy snack while at my mom's in New York. I packed a yam in my suitcase! I wonder what they thought it was when my bag was x-rayed?
