Rosemary Cheddar Potato Latkes

These Rosemary Cheddar Potato Latkes are not your traditional latkes by any means, but they are absolutely delicious. You can serve these golden brown potato pancakes with a dollop of sour cream.
TipMy method of squeezing the water out of the potatoes is using a potato ricer, which is one of my favorite kitchen tools. I also use it for spinach, canned artichoke hearts, etc.

Mexican Scrambled Eggs

I found this recipe online very early in the morning. It's from Nigella Lawson. I had all the ingredients and made it within 5 minutes of reading the recipe. There is nothing more satisfying than that. I even used one of my jalapeños from my garden. I have modified the recipe slightly to include cheese and finishing it under the broiler. Everyone at my breakfast table LOVED it.....

BLT Salad

With the plethora of tomatoes from the garden, I have been making BLT salads for dinner. I make a dressing out of mayo and lemon juice, croutons, iceberg lettuce, bacon, tomatoes and you’ve got a great summer salad. Sometimes I put in an avocado, which makes it a BALT salad.

Danish Pancake Balls (Aebleskiver)

While rummaging through some cupboards I found my mother-in-law's Aebleskiver pan. When you find an Aebleskiver pan what do you do? You make Aebleskivers! Also, it's an excuse to say Aebleskivers. Æbleskiver (Danish meaning apple slices (singular: æbleskive)) are traditional Danish pancakes in a distinctive shape of a sphere. Somewhat similar in texture to American pancakes crossed with a popover, æbleskiver are solid like a pancake but light and fluffy like a popover. The English language spelling is usually aebleskiver or ebleskiver. In the US, a version of æbleskiver is sold with a commercially repackaged pan, branded as "Pancake Puffs".

Chicken Schnitzel

We had an Octoberfest dinner. My brother-in-law Russell was in charge and made the dinner. It was fantastic. He made saukraut and bratwurst, chicken schnitzel and breaded Emmentaler Cheese. It was quite the Smörgåsbord (yes, I know that's a Sweedish word!).

Saturday Salad

My brother-in-law, Russell, sent me this Saturday Salad recipe that he made. Little did he know, I've made this salad for years. It's one of my all time favorites. I prepare everything ahead in the morning. It's from “The Cuisine of California” by Diane Rossen Worthington, which was given to me by my friend Barbie. The chicken breasts are first marinated and then baked, and the juices from the baked chicken are used as the basis the fragrant vinegar-garlic dressing.
