Peanut Butter Chews

Peanut Butter Chews

Try these Peanut Butter Chews. A no bake cookie recipe. I went to San Marino High School in San Marino, California the '70s.  I hated high school.  I moved to California my freshman year and was always an outsider.  I still feel like an outsider, anyway, nothing that years of therapy won't solve.....  I digress....  One high point in my time there was a "cookie" they sold in the cafeteria, which also sold corn dogs that had a greenish tinge to them!  This cookie-ish thing was called a peanut butter chew.  It was very weird and wonderful.  You don't even have to bake these!  So for all my SMHS friends, without further ado - the peanut butter chew!  Nice rhyming, if I do say so! My friend Kay from SMHS took this wonderful photo!

Frenched Green Beans Almondine

I love making Frenched Green Beans Almondine. If you don't have a green bean frencher, go get one! I actually think it's fun to use. These green beans are a lighter alternative to the classic green bean casserole for your holiday dinner.

Asparagus & Prosciutto Bundles

I love these Asparagus & Prosciutto Bundles, which are a side dish from Ina Garten's Make It Ahead cookbook. The only thing I did not do was to use truffle butter. I am not a fan of truffles.

Crispy Diced Potatoes & Onions

Crispy Diced Potatoes & Onions uses baking soda, which provides an alkaline environment so the exterior of the potatoes soften quicker. I am always on a quest to find new potato recipes. Getting them crispy without a commercial deep fryer at home is the big challenge. The result is a more crisp crust.

Orzo with Asparagus, Peas, and Sugar Snap Peas

Orzo, "big rice" in Italian, is a form of short-cut pasta, shaped like a large grain of rice. This Orzo with Asparagus, Peas, and Sugar Snap Peas is a wonderfully crisp summer side salad and great for a picnic.

Roasted Cauliflower, Tomatoes, & Pepperoni Pasta

This Roasted Cauliflower, Tomatoes, & Pepperoni Pasta is really delicious. Cauliflower seems to have made a come back. I love roasted cauliflower. I have many cauliflower recipes on this blog. You can use short pasta, such as penne or fusilli for this recipe, though I was told by my Italian opera singer friend that short pasta is for peasants!
