Grapefruit and Avocado Salad
My friend, Mary Ann, had a really elegant dinner party. She served this absolutely delicious and simple salad. She used Girard's Lite Champagne dressing, but if you can find it, I have included another dressing recipe below.

BLT Salad
With the plethora of tomatoes from the garden, I have been making BLT salads for dinner. I make a dressing out of mayo and lemon juice, croutons, iceberg lettuce, bacon, tomatoes and you’ve got a great summer salad. Sometimes I put in an avocado, which makes it a BALT salad.

Vegetable Sushi
Rolling sushi is not as hard as it seems. I have been making these Vegetable Sushi rolls for years. I learned this recipe and technique from Ina Garten. There are countless YouTube videos, which have many tips on how to do it. I love the beautiful colors of the vegetables.

Citrus Chiffon Pie
First off, I made a mistake. I was trying to speed up the chilling by submerging the bowl in an ice bath. This caused the gelatin mixture to harden to quickly, which is why you can see it isn't smooth. Did this matter? No, but it isn't pretty! The other confession is that I bought a graham cracker crust.... Other than that, it was delicious!

Chicken Salad Tea Sandwiches with Smoked Almonds
I catered a trunk show at a wonderful clothing store in San Marino, CA called Serafina. If you live in the area, you must stop by, their things are exquisite. I made tea sandwiches. These Chicken Salad sandwiches were a big hit.

Egg Salad with Dill & Chives are a bit hit. There is nothing like a really good egg salad sandwich. I think adding some fresh dill takes it to the next level.

Double Decker Tacos
Double Decker Tacos - a taco shell in the center of a flour tortilla, spread with beans and cheese.Then you fill the taco shell with beef, more shredded cheese, shredded lettuce and tomatoes.The refried beans act as the glue in the double decker taco. This is a family tradition in our house.

Broccoli Slaw
I bought a bag of broccoli slaw. I love regular coleslaw, but I think I like this better. You could use toasted almonds, cashews, sunflower seeds instead of pistachios. The bacon is also optional. I actually did't put bacon in mine, too lazy.

Clementine, Burrata & Proscuitto Salad
Clementine, Burrata & Proscuitto Salad is an unexpected way to serve burrata cheese. Burrata is one of my favorite cheeses, which is a fresh Italian cheese, made from mozzarella and cream. The outer shell is solid mozzarella while the inside contains both mozzarella and cream, giving it an unusual, soft texture. The name "burrata" means "buttered" in Italian. Usually, one encounters burrata accompanied by tomatoes, basil and or pesto. I was lucky enough to tour Angelo & Franco - The Mozzarella Guys cheese facility a few years ago. They make amazing authentic Italian cheeses.

Cucumber Pineapple Shrimp is a really simple and refreshing combination of flavors and makes a wonderful party appetizer. When I cater a party, I usually serve several hors d'oeuvres. I always like to serve some hot and some cold.
