Cheesy Zucchini Bake

Serves 4

2 medium tomatoes, peeled and cut into wedges
2 small zucchini, sliced
2 small yellow summer squash, sliced
½ tsp thyme
1 tsp basil
1 tsp garlic powder
½ cup cheddar cheese, shredded
1/3 cup bread crumbs
½ cup mozzarella, shredded

In a large bowl, combine the zucchini, squash and tomatoes with the seasoning and cheddar cheese. Arrange in a greased 1½ quart baking dish; sprinkle with Parmesan cheese and bread crumbs.

Bake, uncovered, at 350° for 40 minutes.  Sprinkle with mozzarella and bake an additional 5 minutes.
