My favorite thing to do is to mix sweet and spicy together. Here is a salmon recipe that fits the bill.
Maple Chipotle Salmon With Orange Dill Sauce
3 lb Salmon Fillet
1/2 cup Pure Maple Syrup
1 Tbs Coarse Ground Dijon Mustard
1/2 tsp Ground Chipotle Chile Powder
1/4 tsp Ground Pepper
1/2 cup Sour Cream
2 Tbs Mayonnaise
1 Tbs chopped Fresh Dill
1 Orange, zested and juiced
Heat oven to 450 F.
Spray broiler pan with non-stick cooking spray.
Place salmon on broiler pan.
Add pure maple syrup, coarse ground Dijon mustard, ground chipotle powder, and fresh ground pepper in small bowl. Whisk to combine.
Spread 2-tablespoons syrup mixture over salmon fillet. Let stand 10-15 minutes.
Preheat broiler. Roast salmon 12-15 minutes, 5-6 inches from broiler, basting several times with syrup mixture.
Salmon should flakes easily when done.
In separate small bowl, combine sour cream, mayonnaise, chopped fresh dill, and 1-tablespoon orange juice.
To Serve:
Remove salmon to serving platter.
Serve citrus dill sauce with salmon.
