Mock Chopped Liver

A Sabbath appetizer
I was just invited to a Bar Mitzvah and chopped liver immediately came to mind. I actually do not like chopped liver, but I love Mock chopped liver.
Vegetarian Chopped Liver is very frequently served as a Sabbath appetizer in Ashkenazi homes. There are many versions of pareve chopped liver, but this one made of onions, peas, beans, nuts and hard-boiled eggs is one of the most popular. Vegetarian chopped liver is lighter and healthier than real chopped chicken livers, but the taste is quite similar.
Mock Chopped Liver
1 Tbs olive oil
3 medium onions, sliced
3/4 cup walnuts
15 oz can of Le Seur baby peas, drained
4 hard-boiled eggs
1/4 tsp salt
freshly ground pepper, to taste
Sauté the onions in the oil over medium high heat, stirring frequently, until nicely browned and caramelized. Set aside.
Place the walnuts on a tray in a 300 degree F oven for about 8 – 10 minutes until aromatic and starting to lightly brown.
Place all the ingredients into your food processor and combine until you have a smooth consistency. Adjust seasonings as desired. Serve chilled.
