Harissa Tahini Cauliflower – Copycat True Food Kitchen

We often go to a True Food Kitchen and one of my favorite things on the menu is this Harissa Tahini Cauliflower. It's so good that I decided to make it at home. It has the perfect balance of sweet, spicy, and savory flavors. The creamy tahini sauce coats the roasted cauliflower, while the harissa adds a bit of a kick. The sweetness of the dates complements the other flavors, and the dill provides a refreshing finish. If you live near a True Food Kitchen you should definitely check it out.

Their motto is - True Food Kitchen is the only restaurant fundamentally based on science which ensures all of its craveable dishes and drinks work to increase the longevity of our people and planet.

  • Yields: 4 Servings

Ingredients

1 large head of cauliflower, chopped into florets

2 tablespoons olive oil

Salt and pepper, to taste

3 - 4 medjool dates, pits removed and roughly chopped into small pieces

Fresh herbs, such as dill and mint

Harissa Tahini Sauce

Juice of 1 small lemon (roughly 2 tablespoon)

3 tablespoons runny tahini

2 tablespoons filtered water

1 tablespoon harissa sauce

1 tablespoon pure maple syrup

¼ teaspoon garlic powder

Salt, to taste

pistachios, chopped - optional

Directions

1Preheat oven to 400°F and line a large baking sheet with parchment paper. Lay the cauliflower florets onto the prepared baking sheet, then toss with the olive oil and season well with salt and pepper. Toss until coated well, then roast for 20-25 minutes until slightly charred and crispy.

2While cauliflower is roasting, prepare the dates, fresh herbs, and the tahini sauce. To make the sauce, whisk all of the ingredients together in a small bowl until smooth.

3Plate your cauliflower and mix in the fresh dates, then drizzle the harissa tahini sauce and top with fresh herbs and pistachios.
