Meatloaf Pie

We have been having socially distant dinners on my Dad's porch. I bring my Instant Pot and plug it in outside. The neighbors always come and ask what I'm making! After making Lasagna, which was a huge hit, I wanted to come up with more things I can make in my 6" removable bottom pan. I love the fact that you can easily slice it into pie shaped wedges. You can also make this in the oven with the same pan. The recipe has a topping, but my Dad just likes ketchup on the side.

  • Yields: 6 Servings

Ingredients

2 pounds ground beef

1 cup Italian-style bread crumbs

¼ cup onion, minced

2 tablespoons milk

2 eggs

2 tablespoons ketchup

¼ cup Worcestershire sauce

½ teaspoons garlic powder

salt and pepper, to taste

spray oil

Topping (Optional)

¼ cup ketchup

2 tablespoons packed light brown sugar

1 tablespoon red wine vinegar

Directions

1Spray the bottom with cooking spray of a 6” springform or removable bottom pan.


2In a large bowl, add the beef, bread crumbs, onion, milk, egg, ketchup, Worcestershire sauce, parsley, garlic powder, salt and pepper. Use your hands to gently mix together until well combined.


3Add the meat mixture to a loaf pan. Pat the meat down into an even layer. Be sure to wrap the bottom of your pan tightly with foil.

Topping

1In a small bowl, add the ketchup, the brown sugar, and vinegar. Stir to combine. Pour the sauce on top of the meatloaf and spread it into an even layer.

Instant Pot

1Set your pot on Manual HP for 38 minutes. Always be sure to put a cup of water in the pot.


2Once your pot beeps you may do a Quick release. Remove the pan gently and rest on a wire rack or plate to cool.


3Remove from the pan and serve.

Oven

1Preheat oven to 350° F.

2Bake uncovered for 55 minutes.

3Let the meatloaf rest for 8 - 10 minutes before serving.
