My daughter Zoe loves fresh corn salads, so I am always trying to come up with new versions. This Herby Corn Salad turned out to be a real hit with my family. And you don't even have to turn on the oven!

Ingredients
2 large ears corn, shucked
1 cup packed fresh basil leaves
½ cup packed fresh mint leaves
¼ cup parmesan, grated
1 clove garlic
¼ cup lemon juice
2 tablespoons extra-virgin olive oil
Directions
1In food processor, pulse basil, mint, Parmesan, garlic, and ¼ teaspoon salt until finely chopped. Add lemon juice and olive oil; pulse until just combined. Cut kernels off cobs; stir into herb sauce.
