Wake Up Your Beans!
I am always looking for new ways to brighten up green beans. These Green Beans with Mustard & Cider Vinegar are tangy and sweet.

Ingredients
3 Tablespoons honey
1½ Tablespoons whole-grain mustard
⅓ cup cider vinegar
Salt and pepper, to taste
2 Tablespoons olive oil
1 shallot, sliced
1 pound green beans, trimmed
Directions
1In a small bowl, whisk together the honey, mustard, vinegar, salt, and pepper; set aside.
2In a large skillet, heat the olive oil over medium heat. Add the shallot and cook, stirring often, for 2 minutes.
3Add the green beans and cook, stirring often, for 1 minute.
4Whisk the honey mixture again and pour it over the beans. Cook, tossing the beans occasionally so they cook evenly, for 3 minutes or until they are tender but still have some bite.
