Braised Leeks with Sel de Mer

The Lowly Leek is a Lovely Vegetable
This is a very simple and delicious side dish. Leeks are usually used diced as an ingredient in a dish, not as the main event. I really love leeks.
Sel de Mer or Fleur de Sel is a French sea salt that is harvested in the ocean off the coast of France. It has a slightly sweet taste and is a wonderful finishing salt for any dish.
Braised Leeks with Sel de Mer
Serves 8
4 large leeks, trimmed and washed
2 cups white wine
2 Tbs butter, cut into bits
1 Tbs sel de mer
Preheat the oven to 375F. Place the leeks into a baking dish and pour the wine over them. Dot the leeks with butter and sprinkle with sel de mer. Place uncovered in the oven for 30 to 40 minutes, until they are fork tender. Remove from the braising liquid and serve immediately.
