Today’s blog comes from Sharon, Brisbane, Australia.

This is a great recipe given to me by an old friend, Nicky, who used to have a cafe in Mooloolaba on the Sunshine Coast here in Queensland. There are three fantastic features to this recipe – it is absolutely delicious, we would have made it literally hundreds of time, it is very easy and it is made with ingredients you usually have in your pantry so great for teenagers late night cooking – in Australia the grocery stores close early – 5.00pm on Saturdays, or when you have time to bake but not shop. This is my daughter Gina’s “signature dish”.

Chocolate Fudge Slice

4 eggs
2 cups caster sugar
8oz butter
¾ cup cocoa powder
¾ cup self raising flour

Preheat oven to 350°F.

Butter and line a 8″ x 12″ pan.

Place eggs and sugar in a bowl, beat until well combined.

Melt butter inna pan, add cocoa, mix, cool slightly.

Add to egg and sugar mixture, stir in sifted flour.

Pour into pan and bake for 25 to 30 minutes.

Remove and cool in the tin.

Sprinkle with icing sugar and cut into squares.
