Hummus Crusted Chicken

While I was pet sitting for a neighbor I picked up a copy of an “O” magazine to read as I was waiting for the dog and cat to do their thing. I spotted a name that looked familiar. It was my other neighbor’s son-in-law from Lottie and Doof. I thought it was funny and the recipe (which I haven’t made yet) looked good. So I continued to thumb through it and I found this recipe entitled “Hummus-Crusted Chicken” Anything with hummus immediately gets my attention (must be in my blood). Needless to say, I stole the magazine (just a while) and made the chicken many times. My husband, Kevin, usually makes the hummus but I have also used Trader Joe’s original hummus. Bon Appetit!
Hummus Crusted Chicken
Serves 4
4 boneless chicken breasts
1 cup of hummus
squeeze of lemon juice
sprinkle of balsamic vinegar
fresh rosemary, chopped
Smother the chicken breasts with about 1 cup of hummus. Top with a squeeze of lemon juice, a sprinkle of balsamic vinegar and chopped fresh rosemary (lemon slices optional).
Bake at 450 degrees until hummus is golden brown and meat is cooked through, 30-35 minutes.
Season with salt and pepper and serve immediately.
