White Bean Chili

Last night my brother-in-law Russell (LOVE him!) made this outstanding white bean chili. It was SO good. By the way, the cilantro garnish on the top was not mine!
White Bean Chili
1 Tbs olive oil
2 medium onions, chopped
4 cloves garlic, pressed
4 oz can green chiles
2 tsp cumin
1½ tsp oregano
¼ tsp ground cloves
¼ tsp cayenne pepper
2x 15.5 oz cans Great Northern white beans (don’t drain)
2 cups cubed cooked chicken (the meat from a 3½ – 4 lb. chicken)
4 cups chicken stock
1 cup grated Monterey Jack cheese, plus ½ cup for garnish
Garnish
sour cream
cilantro
tortilla chips
Sauté the onions in the oil until transparent. Add garlic, chiles, cumin, oregano, cloves and cayenne and cook 2 minutes longer. Add mixture to beans and stock in large pot. Simmer 40 minutes. Add jack cheese and chicken meat and heat through. Garnish with sour cream, cilantro, more jack cheese and chips.
