Baked Zucchini & Caraway

Caraway, also known as Meridian Fennel or Persian Cumin, is a biennial herb with a fleshy root and slender, branched stems. There are many health benefits to eating caraway.

* Caraway seeds are used to relieve indigestion, cold, cough, fever, throat infections, appetite loss and gall bladder problems.

* The seeds strengthen the functions of the stomach. They also provide quick relief from flatulence.

* They form an excellent house cleaner for the body and increase the action of the kidneys.

* Caraway seeds help to maintain proper heart beat rate, strengthen cardiac muscles, prevent hardening of arteries and veins, lower blood pressure and bring down cholesterol level in the blood, thus helping the heart from all sides.

Zucchini & Caraway

Serves 4

5 oz breadcrumbs
7 oz parmesan cheese, grated
7 oz gruyere cheese, grated
1 Tbs butter
1 onion, chopped
15 oz can diced tomatoes
2 garlic cloves, crushed
4 zucchini, sliced
1 tsp caraway seeds
½ tsp dried oregano
½ tsp dried basil

Pre-heat oven to 375°. In a bowl mix together the breadcrumbs, parmesan, gruyere, garlic, basil, caraway seeds and oregano, set aside.

In a pan, add the butter and sauté the onions over a moderate heat until soft. Griddle or grill the zucchini slices for a few minutes on each side.

In a greased gratin dish, add the onions and tinned tomatoes and arrange the zucchini in layers on top with a coating of the cheese, bread and herb mixture between each layer. Top with the breadcrumb mixture and bake in the oven for 30 minutes until brown and crisp.
