Romanian Meat Balls (Chifteluţe)

In honor of my friend Alina’s birthday today, I am posting a recipe that her Romanian Grandmother (Omama) used to make us. They were these little fried meatballs that were good hot or cold. I think her’s had just ground meat and maybe some parsley in them. It was one of our favorite after school snacks.
Romanian Meat Balls (Chifteluţe)
Serves 6
1 lb ground beef
1 onion diced
2 slices of bread without crust moistened in water
1 large potato shredded small
1 large carrot shredded
2 Tbs diced parsley
2 Tbs diced dill
6 diced garlic cloves
2 eggs
salt and pepper
1/2 cup flour
1 cup canola oil
Mix all the above with the exception of flour.
Make little balls with your hands and dust them with flour.
Fry them in hot oil for 5-7 min on each side.
Cool them on paper towel.
You can serve them with a tomato sauce or as is.
