I didn’t have a green bean frencher!! The horror!
The other day, my good friend, Chris, asked me if I had a green bean frencher. I stared at him blankly. A green bean what??? How could I have never heard of a green bean frencher? I really thought I owned almost every type of kitchen tool. Oh, how embarrassing!
He turned up the next week and handed me my own green bean frencher! Well, here it is in action.
Frenched Green Beans Almondine
Serves 4 – 6
2 Tbs unsalted butter room temperature
1/3 cup slivered almonds
Coarse salt to taste
Freshly ground black pepper to taste
1½ lb green beans
Trim green beans, using a bean slicer or knife, cut beans lengthwise into thin strips.
Add salt and green beans to boiling water and cook until just tender. Drain beans and rinse under cold water to stop the cooking. Return the skillet to medium heat and add the butter. When butter is melted, add the almonds and cook until golden brown about 2 – 3 minutes.
Return the green beans to the pan, add salt and pepper, to taste.
Transfer to a serving platter, and serve immediately.
