Bubble & Squeak Patties

This recipe was created by Ashley James, Executive Chef at the Four Seasons in Beverly Hills. As leftovers go, this sounds really good. I always love bubble and squeak.
Bubble and squeak is a traditional English dish made with the shallow-fried leftover vegetables from a roast dinner. The main ingredients are potato and cabbage, but carrots, peas, Brussels sprouts, and other vegetables can be added. The cold chopped vegetables (and cold chopped meat if used) are fried in a pan together with mashed potatoes or crushed roast potatoes until the mixture is well-cooked and brown on the sides. The name comes from the bubble and squeak sounds made as it cooks.
Bubble & Squeak Patties
Serves 4
1 cup mashed potatoes
1 cup cook yams
1 cup chopped Brussels Sprouts
1 cup chopped stuffing
1 cup chopped cooked turkey
1 Tbs Dijon mustard
2 Tbs All Purpose flour
2 Tbs Worcestershire Sauce
Salt and pepper
2 Tbs olive oil
Mix all ingredients together, except for the flour and olive oil.
Divide the mixture into 4 equal portions and make into patties.
Shape using flour so that the mixture does not stick to your hands.
Sauté in oil until golden brown on both sides.
Place patties on a cookie sheet in a 375˚ oven for 10 minutes.
