East Indian Meatloaf

Here is another different take on meatloaf. This time it has an Indian twist, which uses chopped chutney on top. You could also substitute ground turkey for the ground beef for a lower fat version.
East Indian Meatloaf
Serves 6
2 lbs ground beef
2 tsp salt
¼ tsp pepper
½ tsp curry powder
2 eggs
2 Tbs dried minced onion
2 large apples, peeled, cored and chopped
½ orange juice
1/3 cup chutney, chopped
Combine all ingredients, except the chutney. Place in a loaf pan and bake at 350˚ for 1 hour. Spread the top of the loaf with the chutney and put back in the oven for 10 minutes. Good hot, as well as cold.
