My Cousin Jeff’s White Sangria

My cousin, Jeff, is visiting us in Los Angeles and enjoying the cooler, drier climate. Last night he made this wonderful white sangria. It’s really refreshing!
My Cousin Jeff’s White Sangria
Serves 4 – 6
1 bottle white wine
4 oz light rum
1 cup orange juice
1 cup pineapple juice
A splash of soda, we used orange pineapple
2 tsp orange or lemon zest
2 oz simple syrup
Fresh sliced frozen fruit – peaches, oranges, apples, grapes – use whatever you like
To make simple syrup put equal parts sugar and water in to a pan and bring to a boil until the sugar is dissolved and cool (leftover syrup can be stored in a tightly sealed container in the refrigerator for 1 month).
Place all ingredients in a pitcher and stir to mix. Refrigerate and add frozen fruit to serve.
