Lemon Icebox Pie

This is a really easy and fast dessert, except for the chilling time. It would probably work with limes or oranges as well.
Lemon Icebox Pie
Serves 8
1 (9 inch) prepared graham cracker crust
2 (8 oz) packages cream cheese, softened
1 (14 oz) can sweetened condensed milk
1/2 cup lemon juice
1 tsp lemon zest
In a medium mixing bowl, beat cream cheese until fluffy. Add condensed milk, lemon juice, and lemon zest. Mix until smooth. Pour mixture into crust. Refrigerate at least 2 hours before serving. Garnish with whipped cream and mint leaves if desired.
