Chicken & Apple Meat Loaf with Cider Gravy

A Twist on an American Classic
Here is a light version of an American classic – meatloaf, which uses ground turkey and chicken sausages. It also have untraditional – apples, and cider gravy. Serve this with mashed potatoes and a fresh vegetable for dinner tonight.
Chicken & Apple Meat Loaf with Cider Gravy
Serves 4-6
½ lb ground turkey
1 lb chicken & apple sausage (uncooked)
1 cup fresh bread crumbs
1 egg
¼ cup applesauce
¼ cup ketchup
1 tsp Worcestershire sauce
½ tsp salt
¼ tsp black pepper
1 recipe Cider Gravy (recipe follows)
Preheat oven to 350˚.
Put all ingredients (except gravy) in a large bowl and mix thoroughly, kneading with your hands, until everything is well blended. Form into a loaf on a baking pan and bake uncovered for 45 minutes to 1 hour. Internal temperature should be 160˚.
To serve, spoon some gravy over slices of meat loaf and serve the rest on the side.
Cider Gravy
Serves 4 – 6
1 cup apple cider
½ cup chicken stock
½ cup chopped dried apples
Pinch cinnamon
Salt, to taste
Freshly ground black pepper, to taste
1 Tbs cornstarch dissolved in ¼ cup apple cider
In a non-reactive saucepan, boil down the cider and chicken stock until reduced by half. Add the dried apples, cinnamon, and salt and pepper to taste. Stir in the dissolved cornstarch and simmer, stirring often, for 5 more minutes.
