Coq au Biére

You’ve probably tried Coq au Vin. Now try the “urban peasant” version, known as Coq au Biére.
Coq au Biére
Serves 4
2 strips of bacon, chopped
4 chicken thighs
3 carrots, chopped
1 onion, chopped
1 bay leaf
1 tsp thyme, chopped
Freshly ground black pepper
1 cup of beer
½ tsp salt
Fresh parsley, to garnish
Sauté the bacon over high heat for 2 – 3 minutes. Add chicken thighs, skin side down. Turn over and cook for 5 – 8 minutes. When brown on both sides, add the carrots, onion, bay leaf, thyme and pepper. Pour in the beer and cover. Simmer for about 20 minutes. Add salt and parley and serve.
