Apple Cider Vinegar Chicken

One of my husband’s colleagues came for dinner last night and she told me about a chicken recipe that is basted in cider vinegar. Instead of grilling it, you can bake it in the oven. She said she takes the back bone out and flattens the entire chicken and bastes it every 10 minutes.
Apple Cider Vinegar Chicken
1 medium onion, chopped
2 cloves garlic, crushed
2 medium carrots, chunked
2 stalks celery with leaves, coarsely chopped
2 bay leaves
1 tsp thyme
1 lemon, juiced and whole lemon included
1 Tbs kosher salt
1 Tbs black pepper
1 qt water
Simmer above in stainless pot for 30 minutes. Then add:
1/2 lb unsalted butter
1 pt apple cider vinegar
Strain, baste meat and let dry and baste again before placing on grill. Baste at 10-15 minute intervals, during cooking.
