Zucchini & Green Chile Breakfast Casserole

An Egg-cellent Breakfast!
Lately, every time I go to the supermarket they are giving away a dozen eggs. I have about 4 cartons of eggs in the fridge. Fortunately, I have a breakfast to deliver for a meeting and I found a recipe that calls for 10 eggs! I am, of course, using some of my Hatch chiles.
Zucchini & Green Chile Breakfast Casserole
Serves 6
10 eggs
1 1/2 cup zucchini (grated, squeezed and drained)
1 cup cottage cheese
1 (4 oz) can green chilies (drained)
1 cup cheddar cheese (grated)
salt and pepper to taste
Mix everything in a bowl.
Pour the mixture into a greased 8 inch square baking pan.
Bake in a preheated 375F oven until the eggs are firmly set and golden brown on top, about 25-35 minutes.
