Parsnip Chips with Mustard Maple Crème Fraîche

A member of the parsley family, parsnips are a white root vegetable with a pleasantly sweet flavor. Adding parsnips to your diet is a good way to get vitamins, minerals and fiber. While not common in many diets, parsnips are well-rounded nutritionally. Try them roasted, pureed, mixed into mashed potatoes, and added to stews. They do not, however, work very well as crudités or otherwise eaten raw.
Parsnip Chips with Mustard Maple Crème Fraîche
Parsnips
Canola oil
6 oz crème fraîche
2 Tbs grainy mustard
2 Tbs maple syrup
Peel a parsnip per person, then cut into chunky chips and roast with sunflower oil and seasoning at 425˚ for 20-30 minutes until crispy and golden.
Mix crème fraîche with grainy mustard, maple syrup and some seasoning and serve the hot parsnip chips alongside for dipping.
