Strawberry Mousse

Last night, I was out of blog ideas. It happens. You try to come up with 260 blog posts in one year! It ain’t easy, my brain is fried! Anyway, I was heading to bed and found a recipe that I had hand written in a class at La Varenne in Paris in 1982 on the floor. I have no idea how it got on the floor, since we have recently moved, but I picked it up and thought that it was the answer to my bloggers block.
While at La Varenne, you had to write down all the recipes and do little drawings. There were no printed recipes. Good luck with that! The classes were taught by Princess Marie-Blanche de Broglie. Anyway, here it is, a recipe for Strawberry Mousse.
Strawberry Mouse
3 egg whites
¼ cup sugar
1 Tbs white vinegar
1 lb fresh strawberries
¼ cup sugar
1 Tbs Grand Marnier
Mix egg whites, sugar and vinegar in a blender about 2 minutes, until smooth. Set aside.
Mix the strawberries, sugar and Grand Marnier. Fold in the egg white mixture. Put into individual ramekins or molds and freeze. When ready to serve, place in the refrigerator to soften.
