Make me a Cocktail Darling, Please
My husband, Eric, was recently toying with the idea of making us a festive cocktail on a balmy summer evening. A number of drinks were discussed and dismissed, one of which was the Mojito. While I did not fancy a Mojito, I liked the idea of a rum-based drink, so I gave him free range to be creative. What resulted is possibly the best drink I have ever had. He basically made a rum-base Sidecar but with pomegranate liqueur. The mellowness of the rum with the tart acidity of lemon juice with the sweetness of the liqueur is really delicious. My husband served mine straight up, but you could also serve this in a tall glass, on the rocks with a splash of soda for a tall, refreshing cooler. Pomegranates are often associated with the ancient Greek goddess Persephone and rum always makes me think of the beach, so he’s calling this one “Persephone a la Plage.”
Persephone á la Plage
5/10 parts light rum
2/5 parts Pomegranate liqueur (Esprit Rouge from France is what we used although others are available)
1/10 part Cointreau (or other triple sec)
2/10 parts fresh lemon juice
Shake with ice and strain into a cocktail glass. Garnish with a few floating pomegranate seeds.
