Balsamic Strawberries

My daughter, Zoe, made these strawberries over the weekend. It’s an Ina Garten recipe. She serves it over panacotta. They are great mixed with spinach or arugula and some goat cheese. Another idea is to spread a cracker with some mascarpone and top it with the strawberries. Balsamic vinegar and black pepper intensify the flavor of strawberries and bring out their sweetness.
The next day, I went to a brunch and there was a big bowl of balsamic marinated strawberries. It’s a wonderful combination.
Balsamic Strawberries
2 pints (4 cups) sliced fresh strawberries
2 1/2 Tbs balsamic vinegar
1 Tbs sugar
1/4 tsp freshly ground black pepper
Combine the strawberries, balsamic vinegar, 1 tablespoon sugar, and pepper 30 minutes to 1 hour before serving.
