The Chaos of Catering!
Having cooked and shopped for two days straight, I am very tired. My knee doesn’t feel like it’s properly in the socket. I am catering a party tomorrow. I suppose my days are numbered on the big jobs. It’s a ton of work, though I love it. I am in my element and doing what I was born to do. Why it took me years to figure this out, I will never know.
Anyway, enough complaining, I have a lot of catering “secrets” and won’t divulge many, but this one I will part with. It’s a wonderful recipe, that is incredibly easy, a huge crowd pleaser and you can make them in advance and freeze them. The recipe is below, enjoy! This is a gift!
Curried Shrimp Croustades
48 pieces
1 cup Cheddar cheese, grated
1 cup mayonnaise
6 oz tiny shrimp
1 tsp curry powder
3 green onions, chopped
6 English muffins, split
In a medium bowl, mix Cheddar cheese, mayonnaise, shrimp, curry powder and onions.
Toast muffins.
Spread shrimp mixture on muffin halves and broil until bubbly.
Can be made in advance and frozen before broiling.
Cut each muffin into 4 pie shaped wedges and serve warm.
