Ingredients
2 Tablespoons butter
2 Tablespoons olive oil
2 zucchini, sliced on a madoline lengthwise into ribbons
1 green onion, minced
1 Tablespoon fresh basil, chopped
1 Tablespoon fresh parsley, chopped
Zest of 1/2 lemon
Kosher salt and freshly ground black pepper
parmesan cheese, grated
Directions
1Slice the zucchini into long ribbons 1/16-inch thick using a mandoline slicer.
