Tahoe Brunch Casserole

Tahoe Brunch Casserole is the perfect breakfast to have when you have a house full of guests. It is very versatile and can be a vegetarian entrée by adding any ingredients you like.

Ingredients

3 Tablespoons butter, softened

12 slices white bread, crusts removed

½ cup (1 stick) butter

8 ounces fresh mushrooms, sliced

2 cups thinly sliced yellow onions

salt & pepper, to taste

1½ pounds mild Italian sausage

1 pound Cheddar cheese, grated

5 large eggs

2½ cups milk

1 Tablespoon Dijon mustard

1 teaspoon dry mustard

1 teaspoon ground nutmeg

2 Tablespoons flat leaf parsley, finely chopped

Directions

1Butter the bread with the 3 tablespoons softened butter and set aside. In 10-inch skillet, melt the 1/2 cup butter; brown the mushrooms and onions over medium heat for 5 to 8 minutes or until tender. Season with salt and pepper, to taste. Set aside.

2Cook the sausage, drain well and crumble into bite-sized pieces. Grease a 13”x9” baking dish; add and layer half of the bread, mushroom mixture, sausage, and cheese. Repeat the layers, ending with the cheese.

3Mix the eggs, milk, mustards, nutmeg, 1 teaspoon salt and 1/8 teaspoon pepper in a medium-sized mixing bowl. Pour over the sausage and cheese casserole. Cover the casserole and refrigerate overnight.

4Heat oven to 350°. When ready to bake, sprinkle the parsley evenly over the top of the casserole; bake uncovered for 1 hour or until bubbly. Serve immediately.

I’ve been making this since the 1980’s. Made it for Xmas morning and everyone loved it!! It’s from the California Heritage Cookbook of Pasadena. It’s an excellent recipe for Xmas or New Years brunch. I like serving it with fresh fruit, breakfast potatoes and mimosas. Always s hit!

We used to live half a block off Orange Grove Blvd in Pasadena; after the parade, family, friends and sometimes strangers would stop in for this casserole. I make it every New Year no matter where I am — it’s our good luck brunch.

I have this exact recipe without the sausage- was highly recommended. No meat is needed. You could add chopped asparagus (slightly blanched in bowl of water in microwave)
