Sun-Dried Tomato & Basil Cheese Ball

I am not a big fan of serving a boring cheese platter at a party. It usually doesn't get eaten. I guarantee this cheese ball will be the hit of your next party. Cheese balls were all the rage in the 1970s, but this Sun-Dried Tomato & Basil Cheese ball is an updated version of an old classic. So easy to make and the best part is that it has to be made ahead, so you can enjoy your party.

Ingredients

8 ounces low-fat cream cheese, softened

¼ cup sun-dried tomatoes, chopped,

½ cup fresh basil, chopped (save ¼ cup for topping)

½ cup goat cheese, crumble

½ cup pecans, chopped

½ teaspoon salt

½ teaspoon pepper

Directions

1Combine cheese, sun-dried tomatoes, ¼ cup basil, salt and pepper in a small bowl, mixing well. Save the chopped pecans and ¼ cup of basil for the topping.

2Form into a ball and place in fridge to chill (at least 3 hours).

3Before serving, roll the cheese ball in the pecans and extra basil.

4Serve with crackers, toasted baguette or vegetables.

I enjoyed this cheese ball at the family holiday gathering at Leslie and Eric’s on Saturday. It was yummy and highly recommended.
