Southwest Chicken Salad

This Southwestern Chicken Salad is so easy to throw together using a store-bought rotisserie chicken. The dressing is sweet and tangy and made by mixing equal parts ranch dressing with your favorite bbq sauce.

Ingredients

4 cups romaine lettuce, chopped

4 cups cooked chicken, cubed

1 cup corn

1 - 15 ounce can black beans, drained and rinsed

1 cup cherry tomatoes, cut in half

1 avocado, diced

2 green onions, diced

¾ cup cheddar cheese, shredded

1 cup tortilla chips, crushed

¼ cup Ranch dressing

¼ cup BBQ sauce

Directions

1Add all of the salad ingredients to a large bowl. (If you're not serving it right away, add the tortilla chips right before serving.)

2Whisk the ranch and bbq sauce together.

3Spoon dressing over salad, then give everything a big toss to combine. Serve cold.

You can prepare this salad the day before and add the tortilla chips right before serving.
