Shabu Shabu

What is shabu shabu? It’s a Japanese hot pot, featuring paper-thin slices of meat and fresh vegetables cooked together in a large open pot.The best thing about shabu shabu is that the ingredients can be customized to your own taste and preferences, from a wagyu beef to healthy vegetables.

Ingredients

1½ - 2 pounds thinly sliced beef rib-eye steak (chuck or rib eye), cut into ⅛-inch-thick slices

2 cups Napa cabbage, cut into bite-size pieces

4 large shiitake mushrooms, stemmed, quartered

4 scallions (white and pale green parts), cut diagonally into ½ inch-thick slices

12-ounce firm tofu, cut into 1-inch cubes

6 baby boy choy, cut into quarters

To serve

Sushi rice

Ponzu sauce

Sesame sauce

Equipment

large open pot

portable burner or hot plate

Directions

1Arrange steak on a large platter, then cover with plastic wrap and refrigerate.

2Arrange cabbage, mushrooms, scallions, tofu, and bok choy on another large platter, then cover with plastic wrap and refrigerate.

3In a large pot, bring 8 cups water to boil on the stove, then transfer to the tabletop stove.

4Place meat and vegetables in the pot and swish around until meat is cooked through, about 15 seconds.

Ponzu is a citrusy soy sauce and is available at Asian markets and specialty food stores. The sesame sauce can also be found in Asian markets.

I was taken to Downtown Los Angeles 10 years ago from Shabu Shabu… My favorite part is yelling “Shabu Shabu” while you swish meat – We have a theory that this is the perfect timing for a nice piece of meat that is not over cooked the length of time it takes to say “Shabu Shabu” is the perfect swish time…
