Roasted Fingerling Potatoes and Artichokes with Feta

Roasted Fingerling Potatoes and Artichokes with Feta take only 5 minutes to prepare. The potatoes, artichoke hearts and feta are such a great combination! A fingerling potato is a small, stubby, finger-shaped type of potato. They are fully mature when harvested and are not to be confused with new potatoes.

1Preheat oven to 425° F.

2Combine rinsed fingerlings, artichoke hearts, thyme, olive oil, salt and pepper in a large bowl, tossing well to coat. Arrange potato mixture on a slightly oiled sheet pan.

3Bake for 40 minutes or until potatoes are tender, stirring occasionally.

4Combine potato mixture with feta cheese and toss well.


2 pounds fingerling potatoes, sliced into bite size pieces

1 (14 ounce) can artichoke hearts, halved

2 tablespoons fresh thyme, chopped

1 tablespoon extra-virgin olive oil

½ teaspoon salt

¼ teaspoon fresh ground black pepper

½ cup crumbled feta cheese
