A fingerling potato is a small, stubby, finger-shaped type of potato. They are fully mature when harvested and are not to be confused with new potatoes.

1Preheat oven to 425° F.
2Combine rinsed fingerlings, artichoke hearts, thyme, olive oil, salt and pepper in a large bowl, tossing well to coat. Arrange potato mixture on a slightly oiled sheet pan.
3Bake for 40 minutes or until potatoes are tender, stirring occasionally.
4Combine potato mixture with feta cheese and toss well.
