Pork Tenderloin with Thyme

This Pork Tenderloin with Thyme is an incredibly lean and healthy option for dinner. Searing the tenderloin forms a crust sealing in the juices. Make sure you do not overcook it so it does not dry out.

Ingredients

1 garlic clove, minced

½ teaspoon salt

½ teaspoon white pepper

1 teaspoon thyme

1 pound pork tenderloin

1 tablespoon olive oil

Directions

1Mix garlic, salt, pepper and thyme in small bowl.

2Rub mixture over tenderloin and refrigerate for at least 4 hours or overnight.

3Heat olive oil over medium-high heat and brown pork on all sides.

4Remove pork and place in a roasting pan.

5Add enough water to come up to bottom edge of pork (about a half inch).

6Cover with foil and bake at 350° F for approximately 45 to 50 minutes.

7Season with salt & pepper.
