Pork Stir Fry with Pineapple and Peas

Pork Stir Fry with Pineapple and Peas is perfect for busy days and is an easy weeknight meal. Small bite size pieces of pork are quickly stir-fried with pineapple and peas.

Ingredients

28 ounce can pineapple chunks, drained

2 cups white or brown rice, cooked

6 boneless, thin pork chops, cut into small bite size pieces

1 Tablespoon canola oil

1 large onion, sliced

3 cloves garlic, minced

6 Tablespoons soy sauce

1 Tablespoon rice wine vinegar

2 Tablespoons honey

1 Tablespoon sriracha, or other hot sauce

1 jar (small) Pimentos, drained

1½ cup frozen peas

Directions

1Cook rice according to package instructions. Set aside.

2Sauté pineapple until they have good color and set aside.

3Heat oil over medium high heat, then add the pork onions and garlic to the pan. Sauté until they have nice color. Then add the frozen peas, pimentos, soy sauce, rice wine vinegar, honey, and hot sauce. Shake the pan, stir it around, and let it cook and bubble up for a good couple of minutes until the pork is completely cooked and the sauce is thicker. Remove the pork chops to a bowl, then let the sauce bubble up and cook for another 30 to 45 seconds. Pour it over the pork chops. Set aside.

4To serve, pile rice on a plate, then top with a pork mixture. Drizzle a little bit of sauce over the top.
