Pasta with White Beans, Ham & Parmesan

This Pasta with White Beans, Ham & Parmesan is a great way to use leftover ham. It's an easy make-ahead meal for a busy weeknight.

Ingredients

12 ounces pasta, of your choice

2 Tablespoons butter

1 onion, diced

½ cup green bell pepper, diced

1 garlic glove, minced

1 teaspoon dried thyme

3 Tablespoons flour

15 ounce can white beans, drained and rinsed

1 - 2 cups ham

½ cup chicken broth

½ cup milk

salt and pepper, to taste

⅓ cup panko bread crumbs

½ cup Parmesan cheese, plus more for the top

Directions

1Boil water for pasta and cook until al dente following package directions.

2Preheat oven to 350° F.

3While pasta is cooking, sauté onion, pepper, garlic and thyme in butter in a large skillet over medium-high heat for about 8 minutes.

4Add flour and sauté for 2 minutes.

5Then stir in the stock, milk, salt, pepper and bring to a boil, and stir until thick. Stir in Parmesan. Then add the ham and beans and stir for 1 minute.

6Drain pasta and add pasta to sauce.

7Spray a baking dish with non-stick spray. Spoon the pasta mixture into the baking dish, then top with bread crumbs and remaining cheese. Bake for 25 minutes until it’s golden.
