One Pot Italian Sausage, Mushrooms and Rice

This One Pot Italian Sausage, Mushrooms and Rice is really fast to make and you only have to wash one pot! It's great for a busy week night meal.

Ingredients

12 ounces Italian Style Chicken Sausage (fully cooked), cut into ¼ inch slices

8 ounces baby portabello mushrooms, sliced

1 cup white rice, uncooked

15 ounce can diced tomatoes

½ teaspoon each dried oregano and basil

2 cups reduced-sodium chicken broth

5 ounces fresh baby spinach

1½ cups mozzarella, shredded

Directions

1Spray a 12” skillet with cooking spray, and heat over medium-high heat. Add sausage and mushrooms, and cook until mostly it's nicely browned.

2Stir in rice, and pour in tomatoes (undrained), herbs and chicken broth. Bring to a fast simmer.

3Reduce heat to low, and cover. Cook 20 minutes, stirring at least twice during cooking, until liquid is mostly absorbed.

4Reduce heat to the lowest setting, and remove lid. Stir in spinach and about half the cheese until the spinach leaves are wilted and cheese is melted. Sprinkle remaining cheese evenly over the skillet. Cover until cheese is melted (1-2 minutes), then serve.
