Marinated Grilled Tri-Tip

Marinades have only three main components: acid, fat, and flavorings. Marinades add flavor tenderizes the meat by breaking down the outer layers of connective tissue. The fat or oil is to help retain moisture and creates a caramelized brown finish during cooking. Flavorings are what make your marinade go from so-so to spectacular, which can be fresh and dried herbs, spices, onion, garlic, and condiments and sauces like mustard, soy sauce, sugar, molasses, honey, and ginger. This Marinated Grilled Tri-Tip has all those components. You can use it on all types of beef - London Broil, flank steak, skirt steak, etc. I always marinate meat in a ziplock bag.

Ingredients

4 garlic cloves, minced

4 tablespoons balsamic vinegar

4 tablespoons fresh lemon juice

3 tablespoons Dijon mustard

1½ tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon oregano

1 teaspoon basil

1 teaspoon thyme

½ teaspoon dried red pepper flakes

⅔ cup olive oil

2½ pound Tri-Tip or London Broil

Directions

1In a bowl whisk together marinade ingredients until combined well.

2Put the meat in a large resealable plastic bag and pour marinade over it.

3Seal bag, pressing out excess air, and set in a shallow dish.

4Marinate meat, chilled, turning bag once or twice, overnight.

5Remove marinated meat from bag and discard marinade.

6Grill the meat as usual.

7When meat is done grilling remove from grill and let rest  for 10 minutes before slicing.

8Serve warm.

This was fantastic! I marinated the tri tip steak for 6 hours, the flavor was so good! I followed the recipe exactly 🙂
