I found this recipe for Maple, Bourbon & Brown Sugar Roasted Baby Carrots with Shallots on the back of a bag of rainbow carrot.These carrots are sweet, syrupy and, yes, boozy!
1Preheat oven to 400° F.
2Combine bourbon, brown sugar, and maple syrup.
3Toss with carrots in a large bowl with bourbon mixture and the shallots until well coated.
4Transfer carrots to a foil lined baking sheet
5Season with salt and pepper
6Roast for 25 minutes until the carrots are tender.
16 ounces baby rainbow carrots
2 Tablespoons bourbon
2 Tablespoons brown sugar
2 Tablespoons maple syrup
1 shallot, minced
Salt and Pepper
Syrupy and boozy? Count me in!
